Fred Sirieix is a passionate and highly driven individual – a true ambassador for one of London’s most popular destination restaurants, Galvin at Windows. In October 2011 Fred was awarded the “Personality of the year 2011” at the National Restaurant awards for his charity work and relentless promotion of his profession.

He has over 20 years of experience in the restaurant/food industry as well as many professional qualifications within the field. Starting his career as a Chef de Rang at the 3 star Michelin restaurant La Tante Claire Fred then went on to develop his career in various roles at top London restaurants. In 2002 Fred was appointed Restaurant Manager at Brasserie Roux, followed by General Manager positions at Noble Rot (2003-3005) and Graze (2005-2006).

In May 2006, Fred took up his current role as General Manager of Galvin at Windows on the 28th floor at the London Hilton on Park Lane.  Since then, Fred has continuously shown great passion and enthusiasm; always present during service to motivate his team and achieve exceptionally high standards that guests’ expect. Under Fred’s guidance Galvin at Windows has gone on to win some highly acclaimed industry awards including its first Michelin star in 2010.

Despite running one of London’s most successful restaurants, Fred is a very active individual who loves sport (cycling & boxing) and travelling. He is also highly involved in charitable schemes that aim to develop young talent in the hospitality industry. His boundless energy has him as the driving force behind the Galvin Cup (cocktail competition) that awards young talent and Galvin’s Chance, a charity supporting underprivileged youth in the service industry. Another high profile event, The Mayfair Park and Tower Race, raises funds every year for Galvin’s Chance and always proves to be a fun and worthwhile event.
